How Rosarito started.
Rosarito wasn't built in a boardroom. It started with a belief that great food shouldn't require a special occasion — and that the neighborhoods of Greater Boston deserved a dining experience that felt both elevated and genuinely welcoming.
Our first location in Saugus is where the concept took shape. Bold flavors. A team that cares. A space designed for real people on real nights. From day one, the goal was never just one restaurant — it was a system, a standard, and a reason to come back.
Now with Lynn on the way and more markets on the horizon, Rosarito Group is building what it always set out to be: a multi-location restaurant brand that never loses what made it worth visiting in the first place.

Rosarito Restaurant Group is a Massachusetts-based hospitality company building a multi-concept, multi-location restaurant brand across Greater Boston and the North Shore. Our two current concepts are Paolo's Caribbean Fusion in Saugus (Mexican & Haitian food) and Rosarito Sports Bar opening soon in Lynn.
Paolo's Caribbean Fusion in Saugus is now operated by Rosarito Restaurant Group. Same restaurant, same team — with an expanded menu that now includes Mexican alongside the Haitian classics our regulars know us for. Once the city name-change paperwork is approved, the Saugus location will officially transition to Rosarito Caribbean Mexican Bar & Grill.
Paolo's Caribbean Fusion at 304 Lincoln Avenue in Saugus is one of the only places on the North Shore serving both authentic Haitian classics and bold Mexican favorites under the same roof.
