Now proudly operating in partnership with Rosarito Restaurant Group, we're expanding the experience with both our signature Haitian dishes and bold, authentic Mexican cuisine — all under one roof.
As we finalize our official name change, this location will become Rosarito Caribbean Mexican Bar & Grill. Until then, we'll continue operating as Paolo's Caribbean Fusion to keep things familiar for our loyal guests.
